Pan-Roasted Red Snapper with a savory tomato sauce

This recipe is super easy, delish and nutritious. It's hard to go wrong with this and a nice glass of wine (look at the great wine selection on the blog too)! Enjoy!

 *3 to 4 snapper fillets

 Tomato Sauce:

1 can diced tomatoes
Extra virgin Olive oil (about 1-2 Tbsp.)
1-2 garlic cloves, minced
1/4 cup diced onion
1/4 cup diced green or yellow bell pepper
1 tsp. finely chopped fresh thyme
1/2 tsp. Kosher salt (or to taste)
1/2 tsp. black pepper

Saute the onion and garlic in the olive oil for a couple of minutes, add the diced tomatoes, fresh thyme, bell pepper, salt and pepper.  Continue stirring over medium-low heat for about 5 minutes.

In the meantime, prepare fish fillets with a small amount of salt, pepper and lightly drizzle with olive oil.

Add the snapper to a large enough pan (so as to accomodate accordingly) over medium heat and cook for about 3 minutes making sure it is browned well, then flip to other side for an additional couple of minutes.

Serve the fish with the sauce on top. Fish is great with sauteed or grilled vegetables and brown rice.
