Pan-Roasted Salmon with Olive Oil, Lemon & Oregano

For salmon mixture:

With a mortar & pestle, ground two to three garlic cloves, mix in 1-2 Tbsps. olive oil, 1 tsp. crushed oregano and a dash of red pepper flakes if you like.  Once that is well combined you can add 1 Tbsp. of Dijon mustard, a splash of Bragg's All Natural Liquid Aminos and a good squeeze of lemon.

Preparing the salmon:

Two fresh salmon fillets.  Clearly, the more fish that is added requires one to adjust the ingredients to taste.

**Make sure to first add salt & pepper to your salmon before adding the other ingredients.


Heat oil in large heavy pan over medium-high heat.  Carefully place salmon fillets in pan, seasoned side down.  Cook about  2-3 minutes to sear; turn fillets over.  Reduce the heat to medium and continue cooking 6-8 minutes.  Cook just until the fish is opaque throughout.

This is great with jasmine brown rice and fresh veggies of your liking.
