Zesty Chile Verde Strips or Rajas de Chile Verde

Chile Verde Strips (Rajas de Chile Verde)

*This recipe has been a long-standing one in my family and should be shared as they are pretty yummy. Not to "spicy" hot, but if it is, the recipe can always be tempered with a little extra cheese or milk.

Roasted Anaheim Green Chilies (10-12), **To roast chilies, check the previous post**
1 yellow onion, finely chopped
1/4 cup unsalted butter
1/4 to 1/2 cup light sour cream
1/4 cup evaporated milk or to taste
1/2 cup Monterey Jack cheese
A splash of Worchestershire sauce
Season to taste with salt and pepper

First, melt the butter and add the onion to the pan.  Stir over medium-low heat for 3-5 minutes.  Then, add the chili strips making sure to incorporate well. At this point, you can add the evaporated milk, sour cream, cheese, Worchestershire sauce.  Season to taste at the end with salt and pepper.

This dish can be served as a side dish, but you may want to make some extra just in case....
