And don't forget to eat your veggies....

Wanting to create a nice side dish to accompany a little pizza, I used a bunch of swiss chard, some mizuna and tomatoes. So this is what I did....

1 bunch swiss chard, removing the thicker stems, roughly cut the swiss chard
1 bunch mizuna (japanese mustard greens)
2 medium tomatoes, diced
*splash of white wine
*spash of vegetable broth
1/4 cup pine nuts
*A sprinkling of parmesan cheese

First, heat a medium sized pan with approximately 1-2 tbsps. olive oil and minced garlic. Stir for a minute or two over medium-low heat, than add your swiss chard, mizuna, and tomatoes. Stir for a couple of minutes being careful not to overcook it. I like to add a sprinkling of vegetable broth for flavoring as well as a splash of white wine.
Finally, sprinkle about 1 tsp. of Kosher salt & pepper over vegetables. Finish off by adding the pine nuts, quickly mixing one last time. Serve with a sprinkling of fresh parmesan cheese. Hope you like it -- it is pretty tasty.
