Healthy substitute ingredients....

The wonderful thing about cooking, especially in this day and age, is that it can be so creative.  Yes, you do need to follow the recipe if you want your exquisite shrimp curry to come out  right, but you can also make substitutions that really wouldn't make a huge difference.  So, why not experiment a little with your everyday cooking?  For instance, what if instead of using 1 cup coconut milk you use a half cup and substitute the other half with vegetable broth or a lower fat coconut milk; instead of a half cup of butter, use margarine or olive oil.  Read the following article, "Healthy alternative ingredients in cooking", it sums up nicely what some good healthy alternative ingredients you can use while cooking.
