The History of Carrots

The wonderful history of carrots is one that has been enjoyed for thousands of years. A little trivia: Did you know that 80% of carrots that are produced here in the United States occurs in California? Considering all of the nutrients that carrots have, this is great news. Aside from beta-carotene, which is converted to Vitamin A in the body, there are also many antioxidants, vitamins K and C as well as fiber, potassium and some other vitamins and minerals.

A really nice recipe that I refer to from time to time is one called: "Curried carrots with Cilantro" from The Bon Appetit Cookbook by Barbara Fairchild from 2006. I love the combination of the sweetness from the Apricot preserves and the spiciness from the curry and ginger. One that I found from The New Good Housekeeping Book from 1963 is one called: "Nippy Carrot Nibblers" -- fun title...
