Green salad with Ginger-Sesame Dressing

Starting out the New Year with eating more salads? Salads are great to begin with, but mixing things up by adding a variety of ingredients and topping it off with a super delicious and easy salad dressing is well -- soooo good.  Last night I had a salad with mixed greens (spinach, arugula and lettuce) with roasted beets, a sprinkling of feta cheese (gotta have some fat), grilled salmon, avocado and sunflower seeds. The salad dressing came from Epicurious.
